- Sweetener of choice– Only add this if you prefer sweeter peanut butter. I used erythritol, but monk fruit sweetener can also be used.
First add peanut flour and peanut butter to a small bowl. Mix well until thickened and combined. Slowly add water, one tablespoon at a time, until the texture is spreadable. Add salt and sweetener to taste.
Tips to make the best low fat peanut butter :
- To thin out the peanut butter, only add water. If you use milk or a plant-based replacement, the peanut butter must be used within 5 days.
- Don’t forget to use the peanut butter. Using real peanut butter not only adds a modest dose of healthful fats, but it also adds a tongue texture that peanut flour alone can’t match.
- If you want chocolate peanut butter, add cocoa powder or honey.
Storing and freezing low cal peanut butter :
- To store: This peanut butter can be stored at room temperature, covered, for up to 2 weeks. If you’d like to keep it longer, store it in the refrigerator, and it will keep for up to 2 months.
- To freeze: Place leftovers in a shallow container and store it in the freezer for up to 6 months.
